Ingredientes:
2 cucharadas de ajo en polvo
2 cucharadas de cebolla en polvo
2 cucharadas de pimentón
2 Cucharaditas de Chile en Polvo
1/3 taza de sal jacosen o sal kosher, 1/3 taza de pimienta negra molida gruesa, cantidad dividida
1 (12-14 Lb) Pechuga Empacadora Entera, Recortada
1 1/2 taza de caldo de res
Instrucciones:
1. Cuando esté listo para cocinar, ajuste la temperatura Traeger a 225°F y
precalentar, tapa cerrada durante 15 minutos. Para un sabor óptimo, use Super
Fume si está disponible.
2. Para el aliño: mezcle ajo en polvo, cebolla en polvo, paprika,
chile, sal kosher y pimienta en un tazón pequeño.
3. Sazone la pechuga por todos lados con el aliño.
4. Coloque la pechuga, con la grasa hacia abajo, sobre la rejilla de la parrilla. Cocine la pechuga hasta que
alcanza una temperatura interna de 160°F, alrededor de 5 a 6 horas.
Cuando la pechuga alcance una temperatura interna de 160°F, retírela de la parrilla.
5. Envuelva la carne dos veces en papel de aluminio y agregue el caldo de res al
paquete de aluminio. Regrese la pechuga a la parrilla y cocine hasta que alcance un
temperatura interna de 204°F, unas 3 horas más.
6. Una vez que haya terminado, retírelo de la parrilla, desenvuélvalo del papel aluminio y déjelo reposar durante 15 minutos.
Cortar a contrapelo y servir.
